Hawthorn Spice Cordial Recipes

To Make the Liqueur: cover the herbal blend with 750 ml of clear liquor (we recommend brandy, whiskey or vodka). Allow to infuse for 3 days. Strain and sweeten to taste (we recommend adding 1/2 cup honey).

Zero-Proof: use 1 TBSP of the blend to 8 oz. boiling water (makes 16). Infuse for 15-30 minutes. Strain. Add 1 tsp honey or maple sugar to sweeten.

Spiced Old Fashioned

To a rocks glass, add:

Warming Hawthorn Cider

To your favorite mug, add:

  • 1.5 oz liqueur (or zero-proof water infusion)
  • 1 cup of warm apple cider

Hawthorn Orange Punch

To a glass, add:

  • 1/2 cup ice
  • 1.5 oz liqueur (or zero-proof water infusion)
  • 1/2 cup orange juice
  • 1/2 cup sparkling water

 

Damiana-Cacao Liqueur Recipes

The Gringo

Damiana-Cacao Liqueur mixed with milk to create a new variation on the White Russian cocktail.

To a rocks glass, add:

  • 1/2 cup ice
  • 2 oz strained damiana liqueur (or zero-proof water infusion)
  • 2-3 oz milk of choice (we love it with oat milk, but you could use hemp, almond or cow’s milk)

Damiana-Hot Cocoa

To your favorite mug, add:

  • 2 oz. of the infused liqueur (or zero-proof water infusion)
  • 1 cup of your favorite hot cocoa.

Chamomile Spice Hot Toddy

Warming, Immune-Supporting

Ingredients:

4-6 oz Chamomile Tea (or just hot water if you don’t have chamomile)

1 oz (2 TBSP) Seven Spice Syrup or Ginger Syrup (see recipe below)

1 TBSP fresh lemon juice (about 1/4 of a lemon)

1-2 oz Whiskey (optional)

If using Ginger Simple Syrup, add 1/4 tsp (about 2 droppersful) Protective Bitters or bitters of your choice. If you are using Tonic’s Seven Spice Cocktail Syrup, the bitters are already included)

Instructions:

  1. Steep the chamomile tea for 5-10 minutes, keeping your vessel covered with a lid or a plate to prevent the volatile oils from escaping. It does get more bitter, the longer you steep it, but bitter is good for you! You are extracting more of the medicinal properties! If using loose chamomile, strain through a fine sieve into a mug. If using tea bags, simply remove the tea bag.
  2. Add ginger syrup, lemon juice, bitters and whiskey to the mug and give a stir. Taste. Adjust to your taste, adding more water, lemon, syrup or whatever to suit your palette.
  3. Wrap up in a warm sweater or blanket and sip slowly, and go to bed early.

Ginger Syrup Recpe

1 oz dried ginger root

16 fl oz water

1/2 cup honey

  1. Add ginger root and water to a small saucepan and bring to a boil. Once boil is reached, reduce the heat and let simmer on low heat for about 20 minutes, until the amount of water has reduced by about half. (Tip: use a chopstick to measure the water level in the pot when you start. Mark it with a pencil. Find the halfway point between that mark and the bottom of the chopstick and mark that with a pencil. When the water level reaches this line, you are ready to strain).
  2. Strain the ginger root through a mesh sieve or cheesecloth, reserving the liquid. You should have about a cup of ginger infusion. Make sure to wring the excess liquid from the roots. I like to use the back of a spoon to press it out through the sieve.
  3. Add 1/2 cup of honey to the infusion and stir to dissolve.
  4. Store the syrup in an airtight container in the fridge for up to 3 months.

Elderberry Ginger Sparkler

Ingredients:

Tonic’s Elderberry-Ginger Syrup

Tonic Water*

Fresh Lime or Lemon

Protective Bitters

Instructions:

  1. Add 1 fl oz (2 TBSP) Elderberry-Ginger Syrup to a glass with ice
  2. Fill to the top with tonic or seltzer water
  3. Add ¼ tsp of Protective Bitters
  4. Squeeze a wedge of lemon or lime into the glass and give everything a stir
  5. Enjoy!

Chamomile-Grapefruit Sparkler

Chamomile-Grapefruit Sparkler (cooling & calming)

Ingredients:

Fresh Grapefruit

Chamomile Syrup (see recipe below)

Tonic Water*

Dreamer’s Bitters

Instructions:

  1. Juice the grapefruit
  2. Add the grapefruit juice to a glass with ice, then stir in the Chamomile syrup
  3. Optional: Add 1-2 fl oz of gin or vodka
  4. Top the glass with tonic or seltzer water
  5. Add ¼ tsp of Dreamer’s Bitters and give a stir
  6. Garnish with bee pollen, a slice of grapefruit, or fresh chamomile flowers

Chamomile-Honey Syrup

Ingredients:

1 oz Dried Chamomile flowers

1 cup Honey

Water

Instructions:

  1. Add 1 oz dried chamomile flowers and 16 fl oz of water to a small sauce pot.
  2. Bring to a boil and immediately remove from heat. Cover the pot with a lid and let steep for 10 minutes.
  3. Strain the chamomile from the liquid using a fine mesh strainer or sieve. You should have 12 fl oz of infusion.
  4. Add 1/2 cup of honey to every cup of infusion. If you yielded 12 fl oz of infusion, add 3/4 cups honey. If you only got 8 fl oz of infusion, just add 1/2 cup of honey (This doesn’t have to be exact, it’s more a matter of preference; you can add equal parts honey and infusion if you like it sweeter. The more honey you add, the longer the syrup will keep.
  5. Store the syrup in an airtight container and keep refrigerated. It will keep for 2-4 weeks.

1 Orange or Lemon, Juiced

Instructions:

  1. Add the citrus juice plus 2 TBSP of Blood-Building Syrup to a large glass (about 16 oz)
  2. Add ice to the cup, then fill cup to the top with Tonic Water
  3. Add 1/4 tsp of Embodied Bitters and give another stir
  4. Garnish with a slice of lemon or orange and enjoy the grounding effect!
